Rhonda's Beet Soup from CSA Potluck




Rhonda was kind enough to give me her recipe for raw beet soup, which many of us enjoyed at the CSA potluck.


2 cups of beets (chopped)
1 1/2 cups orange juice
1/4 cup red onion
1 tbsp orange zest
1 tbsp olive oil
1/2 tbsp apple cider vinegar

Process until smooth. A garnish of an orange wedge and perhaps some fresh herbs on top would add for a fine decoration when presented.
